How to rename layers

Just double-click directly on the layer names in the layer palette...this even works for auto-named text layers.

How to create layer sets and put layers into them.

You can make pages with buttons and text menus without using layer sets, but layer sets are required for graphic menus and generally make life a lot easier. You can apply most hints to layer sets, allowing you to keep complex buttons in multi-layer form by making their layer set into the button rather than merging them into a single layer beforehand.

How to create and edit type layers

In particular you should know how to create "paragraph text", which is just text created by dragging an initial rectangle with the text tool instead of just clicking.
